Zero Waste CSA Week 7

This week in our CSA we received a summer squash, eggplant, beets, broccoli, celery, peas, bell peppers, hot peppers, onions, zucchini, cucumbers, green beans, and a little bundle of thyme.

  • Since we were gone Saturday through Monday, I wanted to make sure to use up our produce. I made a double batch of Summer Squash soup and then froze it before I left. I haven’t tried it yet, but it looked awfully good. I used all of the yellow squash, an eggplant, and a zucchini to make it.
  • One night this week I made a pork loin with a zucchini salad for the side. The salad was not good so I’m not going to link to it. It was the first real fail/casualty in this zero waste challenge.
  • I made zucchini bread again because I have zucchini coming out of my ears. I froze one loaf and took the other to work to share with my colleagues. It was a big hit.
  • Recipe of the week was definitely these Healthy Baked Cheesy Zucchini Bites. We already had everything needed one hand to make them, they were super easy, and they were delicious!! We made two dozen, and I will definitely be making more of these.
  • We used our broccoli, some celery, and one of the onions to make a big batch of Broccoli Cheddar Soup. It’s been a bit cooler this week, so it was perfect on a rainy day.
  • I made guacamole with the tomatoes, an onion, and the serano pepper.
  • Pickled Peppers– if you haven’t noticed by now, when I do not have time to make dinners or lunches I just pickle it. All of this pickling just makes me think of the “We Can Pickle That” sketch from Portlandia. I used the serano pepper in the guac, and then I pickled the rest of the peppers. The plan is for Collin to put these on sandwiches for lunches. In an article that I read, it also said that you can use hot-pepper-infused vinegar for other things too.

  • Last bit not least the dinner I made for tonight was baked chicken with zucchini and tomatoes, and I boiled all of the green beans and topped it with butter and salt. Perfect patio dinner! I used some of the thyme in this recipe and then I hung it in my kitchen to dry and use later on.
